Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.
Note: WorldCat is an excellent resource for finding author information and contents of anthologies.
This penultimate issue of EQMM's yearlong celebration of 75 years since publication features a "Critical Encounters: A Toast to Mystery Reviewers and Scholars" theme and contains another good collection of stories. Simon Brett's "The Body in the Bookshop" contains good humor in the classical cozy realm. Special kudos to Jim Allyn's "The Master of Negwegon" made memorable for its Michigan state park setting, suspenseful manhunt plot and poignant glimpse at friendships torn asunder by war.
