My husband and I are participating in an 8-week program at our local hospital using this cookbook and their recipes and tips on EatRealAmerica.com. Excellent program! The recipes we have tried so far have been unusual and tasty, the tips very helpful for reading labels and choosing wisely. Healthy eating made easy and delicious!

Note: The program at our hospital was interrupted because of concerns over Covid-19 but we'll be able to complete the last three weeks online in April.

We have many favorite recipes (keepers!) but I'll just list a few:
Slow Cooker Chicken Enchilada Soup
Southwest Stuffed Sweet Potato
Baked Fish Parmesan
Cheeseburger Quesadillas
Spinach Artichoke Pesto Pizza
Mediterranean Roasted Eggplant Pasta with Lemon Garlic Fish
Thai Pizza
Cashew Chicken Bok Choy (husband's favorite)
Bok Choy Salad with Sesame Soy Dressing
Arugula Salad with Orange sesame Vinaigrette
Broccoli Cauliflower Salad
Broccoli Poppers
Honey Dijon Roasted Carrots and Parsnips
Spicy Peanut Sweet Potato Soup
Mini Frittatas
Power Pancakes
Peanut Butter Cup Power Balls
Dark Chocolate Mousse
...and there are many more recipes on their website. I highly recommend!

Most people won’t add a cookbook to their “read” list but I did because this is more than a cookbook and has a lot of information in it.

The recipes I’ve tried so far are…French Kiss!! I was worried my husband would complain but he has loved every dish I have made so far (I’m in week 1 as I write this review).

The shopping lists and pictures of recipes are a plus!
