from the reviews about the authors writing style and sense of humor, I feel I don't want to read it. Can you suggest a good book about the science of cooking as an alternative to this?

Dave good alternatives to this would be "Salt, Fat, Acid, Heat" and "On Food and Cooking" (although the second doesn't have many recipes, it is the go-to reference for this subject)
